Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes, until frothy.

Mix Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.

Knead Dough
Mix the ingredients until a dough forms. Transfer to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Prepare Toppings
While the dough is rising, slice the fresh tomatoes and mozzarella cheese into thin slices. Set aside.

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

Shape the Dough
Once the dough has risen, punch it down and roll it out on a floured surface into a round shape, approximately 12 inches in diameter.

Add Toppings
Transfer the rolled dough to a pizza peel or a baking sheet. Layer the sliced tomatoes and mozzarella evenly over the dough. Sprinkle grated Parmesan cheese and fresh basil leaves on top.

Drizzle with Olive Oil
Drizzle the extra virgin olive oil over the top of the assembled pizza.

Bake Pizza
Carefully transfer the pizza onto the preheated pizza stone or baking sheet. Bake for about 10-12 minutes, until the crust is golden brown and the cheese is bubbly.

Remove the pizza from the oven, let it cool for a couple of minutes, slice, and serve hot.
