Chocolate Lava Cake

Berry Parfait

Method

Chocolate Lava Cake

  1. 1

    Melt Chocolate and Butter

Preheat your oven to 200°C (400°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

  2. 2

    Mix Dry Ingredients

In another bowl, combine the flour, granulated sugar, and a pinch of salt. Mix well.

  3. 3

    Combine Ingredients

Add the melted chocolate mixture to the dry ingredients. Stir until combined. Then, add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract.

  4. 4

    Prepare Baking Dishes

Grease ramekins with butter and dust with flour to prevent sticking. Pour the batter into each ramekin, filling them about 3/4 full.

  5. 5

    Bake

Place the ramekins in the preheated oven and bake for about 12-14 minutes until the edges are set but the center is still soft.

  6. 6

    Cool and Serve

Let the cakes cool for 1 minute, then carefully invert them onto plates. Serve immediately, optionally with a scoop of ice cream.

Berry Parfait

  1. 7

    Prepare Berries

Wash the mixed berries under cold water and pat them dry with a paper towel. Slice strawberries if they are large.

  2. 8

    Layer Ingredients

In a glass or bowl, add a layer of Greek yogurt at the bottom. Follow it with a layer of mixed berries, then a layer of granola. Repeat the layers until all ingredients are used, finishing with a layer of berries on top.

  3. 9

    Drizzle Honey

Drizzle honey over the top layer of berries and garnish with fresh mint leaves.

  4. 10

    Serve

Serve immediately, or refrigerate for up to 1 hour before serving for a chilled dessert.
