Prepare the Chicken
If you haven't done so already, cook and season the chicken. You can use pre-cooked chicken or cook chicken breasts with your favorite spices and shred them.

Grate the Cheese
Grate the cheddar jack cheese if not already pre-shredded.

Prepare the Toppings
Chop the ingredients for the pico de gallo salsa if using fresh ingredients. Mix tomatoes, onions, cilantro, lime juice, and jalapeños together in a bowl.

Assemble the Quesadilla
Heat a large skillet over medium heat. Place one flour tortilla in the skillet. On one half of the tortilla, sprinkle a layer of cheddar jack cheese, followed by a layer of pulled seasoned chicken, and then another layer of cheese on top to help seal the quesadilla.

Cook the Quesadilla
Fold the tortilla in half to cover the filling. Cook for about 3-4 minutes, or until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a spatula and cook for an additional 3-4 minutes on the other side.

Repeat
Remove the cooked quesadilla from the skillet and place it on a cutting board. Cut it into wedges and keep warm. Repeat the process with the remaining tortillas and filling.

Serve the quesadilla wedges hot with pico de gallo salsa and sour cream on the side for dipping.
