Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the crust
Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes until golden. Remove from the oven and let cool.

Prepare the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and continue to beat until well incorporated.

Add sour cream and vanilla
Add the sour cream and vanilla extract to the cream cheese mixture. Beat until smooth.

Incorporate eggs
Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

Bake the cheesecake
Pour the filling into the cooled crust and smooth the top. Bake at 350°F (175°C) for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.

Prepare the topping
In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat and let sit for about 10 minutes to allow the strawberries to release their juices.

Once the cheesecake is chilled, slice and serve with the strawberry topping on each slice.
