Cauliflower Cake

    Prepare the Cauliflower

    Remove the leaves and stem from the cauliflower. Cut it into florets and steam until tender, about 10 minutes. Let it cool.

    Mash the Cauliflower

    Once cooled, place the steamed cauliflower in a large bowl and mash it with a fork until smooth.

    Mix Ingredients

    Add breadcrumbs, eggs, parmesan cheese, garlic powder, salt, and black pepper to the mashed cauliflower. Stir until well combined.

    Form Patties

    Form the mixture into patties, about 1/2 inch thick.

    Cook Patties

    Heat olive oil in a skillet over medium heat. Cook each patty for 4-5 minutes on each side or until golden brown.

Balsamic Tomatoes

    Prepare Tomatoes

    Slice the tomatoes into thick rounds and place them in a bowl.

    Dress the Tomatoes

    Drizzle balsamic vinegar and olive oil over the tomato slices. Sprinkle with salt and pepper. Toss gently to coat.

Garlic Aioli

    Combine Ingredients

    In a small bowl, mix mayonnaise, minced garlic, lemon juice, and salt until smooth.

Assembly

    Toast Buns

    Lightly toast the brioche buns on a skillet or grill until golden.

    Build the Sandwich

    Spread garlic aioli on the bottom half of each bun. Layer with mixed greens, a cauliflower cake patty, balsamic tomatoes, and a sprinkle of feta cheese. Top with the other half of the bun.
