Method

Bread Pudding

  1. 1

    Prepare the Bread

Preheat the oven to 350°F (175°C). Cut the stale bread into cubes and place them in a large mixing bowl.

  2. 2

    Mix Wet Ingredients

In a separate bowl, whisk together the milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, ground cinnamon, and salt until well combined.

  3. 3

    Combine and Soak

Pour the wet mixture over the bread cubes. Gently stir to ensure all the bread is soaked. Let it sit for about 30 minutes to absorb the liquid.

  4. 4

    Bake the Pudding

Transfer the soaked bread mixture to a greased baking dish. Bake in the preheated oven for 45-55 minutes, or until the top is golden and the center is set.

Caramel Sauce

  1. 5

    Make the Caramel

In a medium saucepan over medium heat, add the granulated sugar and allow it to melt without stirring. Once it begins to turn amber in color, remove it from heat.

  2. 6

    Add Cream and Butter

Carefully add the heavy cream and butter to the melted sugar, stirring continuously until smooth. Add vanilla extract and a pinch of salt, then let it cool slightly.

Whipped Cream

  1. 7

    Prepare Whipped Cream

In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or whisk, whip until soft peaks form.

Serving

  1. 8

    Serve the Dessert

Scoop the bread pudding into serving bowls, drizzle with warm caramel sauce, add a dollop of whipped cream, and top with a scoop of vanilla bean ice cream.
