    Prepare the Ribs

    Remove the membrane from the back of the ribs for better flavor absorption. Rinse the ribs under cold water and pat dry with paper towels.

    Make the Rub

    In a small bowl, combine paprika, brown sugar, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Mix well.

    Season the Ribs

    Rub the spice mixture generously over both sides of the ribs. Let the ribs sit at room temperature for about 30 minutes to allow the flavors to penetrate.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). Soak the wood chips in water for about 30 minutes, then drain.

    Smoke the Ribs

    Place the ribs in the smoker bone side down. Add the soaked wood chips to the smoker box. Smoke the ribs for 3 hours.

    Mop the Ribs

    In a small bowl, mix the apple cider vinegar and water. After 1.5 hours of smoking, use a mop or brush to apply the vinegar mixture to the ribs every 30 minutes.

    After 3 hours of smoking, remove the ribs from the smoker and brush with BBQ sauce. Wrap them in aluminum foil and return them to the smoker for an additional hour.
