In a large pot, heat the olive oil over medium heat. Add the Andouille sausage and cook until browned. Remove from the pot and set aside.
2. Sauté Vegetables
In the same pot, add the onion, green bell pepper, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.
3. Add the Rest of the Ingredients
Stir in the diced tomatoes, chicken broth, okra, bay leaves, cayenne pepper, thyme, salt, and black pepper. Bring to a simmer.
4. Cook the Gumbo
Let the gumbo simmer for about 30 minutes, stirring occasionally. Add the cooked Andouille sausage and shrimp to the pot in the last 5 minutes of cooking.
5. Serve
Remove bay leaves before serving. Serve the gumbo over cooked rice and garnish with chopped green onions.
