    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water and let them cool for about 10 minutes.

    Peel the Eggs

    Once cooled, gently tap each egg on a hard surface and peel the shell off under running water to make it easier.

    Prepare the Filling

    Cut the peeled eggs in half lengthwise. Remove the yolks and place them in a bowl. Mash the yolks with a fork and mix in the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.

    Fill the Egg Whites

    Spoon or pipe the mixture back into the egg white halves. Sprinkle with paprika and, if desired, top with chopped chives.
