Peel and dice the potatoes into small cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook until golden brown and crispy, about 10-15 minutes, stirring occasionally.

Cook the Filet Mignon
Season the filet mignon with salt and pepper. In another skillet, heat 1 tablespoon of olive oil on medium-high heat. Sear the filet for about 4-5 minutes on each side for medium-rare, adjusting the time based on your preferred doneness. Remove from heat and let it rest for a few minutes before slicing.

Scramble the Eggs
In a bowl, whisk the eggs with a pinch of salt. In a non-stick skillet, melt 1 tablespoon of butter over medium-low heat. Pour in the eggs and gently stir with a spatula until they are fluffy and just set, about 3-4 minutes.

On a plate, place a serving of the hash, top with the scrambled eggs, and add slices of the filet mignon. Drizzle with hollandaise sauce and garnish with additional pepper if desired.
