Make the Cannoli Shells

In a bowl, mix flour, sugar, cocoa powder, and salt. Add butter and mix until crumbly. Stir in egg yolk and wine/vinegar, then add cold water until dough forms. Knead until smooth, wrap in plastic, and refrigerate for 30 minutes.

Roll and Cut Shells

Roll out the dough thinly on a floured surface. Cut into circles (about 4 inches in diameter). Wrap each circle around a cannoli tube and seal the edges with a bit of water.

Fry the Shells

Heat oil in a deep pan. Fry the wrapped shells until golden brown (about 2-3 minutes). Remove and drain on paper towels, then carefully slide off the tubes.

Prepare the Filling

In a bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth. Fold in chocolate chips.

Fill the Cannoli

Once the shells are cooled, fill a piping bag with the ricotta mixture and pipe into each shell from both ends.

Serve

Dust with powdered sugar before serving. Enjoy your homemade cannoli!
