    Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks, lemon juice, and white vinegar. Place the bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn't touch the water. Slowly add melted butter while whisking constantly until the sauce thickens. Season with salt and set aside.

    Cook the Salmon

    Season the salmon fillets with salt, black pepper, and paprika. Heat a skillet over medium heat and add a drizzle of olive oil. Cook the salmon for about 4-5 minutes on each side, or until cooked through and flakes easily with a fork.

    Sauté the Spinach

    In the same skillet, add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with a pinch of salt and lemon zest.

    Prepare the Hash Browns

    In a separate skillet, heat some oil and add the hash browns. Cook until crispy and golden brown on both sides, about 5-7 minutes.

    Assemble the Dish

    On a plate, layer the hash browns, followed by the sautéed spinach, and top with the cooked salmon. Drizzle with hollandaise sauce before serving.
