Marinate Chicken
In a bowl, combine the buttermilk, Cajun seasoning, salt, and black pepper. Add the chicken breasts and ensure they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

Prepare Cajun Aioli
In a separate bowl, mix mayonnaise, garlic powder, lemon juice, and hot sauce until well combined. Set aside.

Dredge Chicken
In a shallow dish, add flour and season with additional Cajun seasoning if desired. Remove chicken from buttermilk, allowing excess to drip off, and coat thoroughly in the flour mixture.

Fry Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated chicken breasts. Fry for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F). Remove and drain on paper towels.

Assemble Sandwiches
Toast the burger buns lightly. Spread a generous amount of Cajun aioli on the bottom half of each bun. Add fried chicken, top with pickles, and cover with the top bun. Serve immediately.
