    Prepare the Potato Cake

    Peel and boil the potatoes until tender. Drain and mash them in a bowl. Add heavy cream, parmesan cheese, and truffle oil. Mix well, season with salt and pepper.

    Form and Cook the Potato Cake

    Shape the mashed potatoes into cakes. Heat olive oil in a frying pan over medium heat and cook the potato cakes until golden brown on both sides. Set aside.

    Prepare the Asparagus

    Trim the ends of the asparagus and toss with olive oil, salt, and garlic. Roast in the oven at 400°F (200°C) for about 10-12 minutes until tender.

    Cook the Filet Mignon

    Preheat a skillet over medium-high heat. Season the filet mignon with salt and pepper. Add butter to the skillet and sear the filet for about 4-5 minutes on each side for medium-rare, or to desired doneness.

    Plate the Dish

    On a plate, place the truffle potato cake, top it with the filet mignon, and arrange the roasted asparagus on the side. Drizzle with extra truffle oil and garnish with lemon zest.
