    Prepare the Béchamel Sauce

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of flour and whisk until combined. Gradually pour in 1 cup of milk while continuously whisking until the mixture thickens. Season with salt and black pepper. Set aside.

    Assemble the Sandwich

    Preheat your oven to 375°F (190°C). Take 2 slices of sourdough bread and layer 2 slices of prosciutto and half of the Gruyère cheese on each slice. Top with the remaining bread slices to form sandwiches.

    Cook the Sandwiches

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the sandwiches and cook until golden brown on one side, about 3-4 minutes. Flip and add the remaining butter, cooking for another 3-4 minutes until golden brown and the cheese has melted.

    Add the Béchamel and Eggs

    Place the cooked sandwiches on a baking sheet. Pour the Béchamel sauce over each sandwich and sprinkle with the remaining Gruyère cheese. Bake in the oven for 5-7 minutes until bubbly and golden.

    Fry the Eggs

    While the sandwiches are baking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet and cook sunny-side up until the whites are set. Season with salt and black pepper.

    Remove the sandwiches from the oven, top each with a sunny-side up egg, and serve immediately.
