Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in 1 cup of milk until just combined. Turn the dough out onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden.

Prepare the Gravy
In a skillet over medium heat, cook the sausage until browned and cooked through, breaking it into crumbles. Remove excess grease, leaving about 2 tablespoons in the pan. Sprinkle flour over the sausage and stir to combine, cooking for another minute. Gradually whisk in the remaining 2 cups of milk, stirring constantly until the gravy thickens. Add parsley and black pepper, then remove from heat.

Serve
Split the biscuits in half and ladle the sausage gravy over the top. If desired, serve with pieces of fried chicken on the side.
