Salmon Fillet and Accompaniments

Preparation and Cooking

    Prepare the Vegetables

    Chop the zucchini, bell pepper, and carrot into bite-sized pieces. In a bowl, toss the vegetables with 1 tablespoon of olive oil, salt, and black pepper.

    Grill the Vegetables

    Preheat the grill to medium-high heat. Place the seasoned vegetables on the grill and cook for about 8-10 minutes, turning occasionally until they are tender and slightly charred.

    Prepare the Salmon

    Rub the salmon fillets with the remaining tablespoon of olive oil, lemon juice, garlic powder, salt, and black pepper.

    Cook the Salmon

    Place the salmon fillets on the grill, skin-side down. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Cook the Pasta

    While the salmon is grilling, bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Combine Pasta and Marinara

    In a saucepan, heat the marinara sauce over medium heat. Add the cooked pasta and toss to coat evenly.

    Plate the grilled salmon, alongside the grilled vegetables and marinara pasta. Garnish with fresh basil.
