Instructions

  1. 1

    Prepare the Butternut Squash

Peel and dice the butternut squash. Boil or steam until tender, about 15 minutes. Mash and let cool.

  2. 2

    Make the Ravioli Filling

In a bowl, combine the mashed butternut squash, salt, black pepper, and half of the Parmesan cheese. Mix well.

  3. 3

    Prepare the Ravioli

Roll out the ravioli dough. Place small spoonfuls of the filling on one half of the dough, fold over, and seal the edges using a fork.

  4. 4

    Cook the Ravioli

Bring a large pot of salted water to a boil. Cook the ravioli for about 4-5 minutes or until they float. Drain and set aside.

  5. 5

    Make the Sauce

In a skillet, heat the olive oil over medium heat. Add minced garlic and cook until fragrant. Add the prosciutto and cook until crispy.

  6. 6

    Finish the Sauce

Stir in the diced asparagus and cook for 2-3 minutes. Add the mascarpone cheese and remaining Parmesan cheese, stirring until smooth.

  7. 7

    Combine and Serve

Add the cooked ravioli to the sauce, gently tossing to coat. Serve warm, garnished with fresh basil.
