Prepare the Dough
In a bowl, combine warm water, brown sugar, and yeast. Let it sit for about 5 minutes until foamy. In a large mixing bowl, mix flour and salt. Add the yeast mixture and stir until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm spot for about 1 hour or until doubled in size.

Shape the Pretzel Bites
Preheat your oven to 450°F (230°C). Punch down the dough and turn it out onto a floured surface. Roll the dough into a rope about 1 inch thick and cut into 1-inch pieces. Shape each piece into a bite.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Carefully add the pretzel bites to the boiling water in batches for about 30 seconds each.

Bake the Pretzel Bites
Remove the bites with a slotted spoon and place them on a parchment-lined baking sheet. Brush with beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.

Make the Cheese Sauce
In a medium saucepan over medium heat, combine the sharp cheddar cheese, cream cheese, and milk. Stir continuously until the cheeses melt and the mixture is smooth.

Season the Dip
Add garlic powder, onion powder, salt, and black pepper to the cheese mixture. Stir well to combine and heat for another 2-3 minutes until warm.

Transfer the cheese dip to a serving bowl and serve warm alongside the pretzel bites.
