Preparation of Tartar Sauce

Make the Tartar Sauce
In a bowl, mix together mayonnaise, finely chopped pickles, lemon juice, and finely chopped capers. Season with salt and pepper to taste. Set aside in the refrigerator to chill.

Cut the Potatoes
Peel the potatoes and cut them into long, thin strips for fries.

Heat the Oil
In a deep pot or fryer, heat 4 cups of vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until smooth.

Heat the Oil for Frying
In a separate deep pot or fryer, heat 4 cups of vegetable oil to 350°F (175°C).

Batter and Fry the Fish
Dip each fish fillet into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
