Crust Preparation

Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the crumbs are moistened.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for about 10 minutes, then remove and allow to cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in the granulated sugar and mix until well combined.

Add Remaining Ingredients
Add the sour cream, vanilla extract, and eggs (one at a time) to the cream cheese mixture, mixing thoroughly after each addition until the mixture is smooth.

Fill the Crust
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake the Cheesecake
Bake in the oven at 325°F (163°C) for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour to cool gradually.

Chill the Cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to set completely.

Make the Sauce
In a saucepan over medium heat, combine the sliced strawberries, granulated sugar, and lemon juice. Cook, stirring gently, until the strawberries release their juices and the mixture thickens slightly, about 10-15 minutes.

Cool the Sauce
Remove from heat and let the sauce cool. It can be served warm or chilled over the cheesecake.

Serve the Cheesecake
Once the cheesecake has set, remove it from the springform pan. Top with the strawberry sauce just before serving. Slice and enjoy!
