Cannoli Shell Preparation

Make the Dough
In a large bowl, combine flour, sugar, cocoa powder, and salt. Add cubed butter and mix until the mixture resembles coarse crumbs. Stir in egg yolk and wine (or vinegar). Gradually add water until the dough comes together. Knead for about 5 minutes until smooth.

Rest the Dough
Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Roll and Cut
On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles (about 4 inches in diameter).

Form Shells
Wrap each circle around a cannoli tube, sealing the edges with a bit of water. Make sure the seam is on the bottom.

Fry the Shells
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing the tubes.
