    Prepare the Short Ribs

    In a large pot, heat olive oil over medium-high heat. Season short ribs with salt and black pepper, then sear them in the pot until browned on all sides. Remove short ribs and set aside.

    Sauté the Vegetables

    In the same pot, add diced onion, carrot, and celery. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for an additional minute.

    Build the Sauce

    Stir in tomato paste and cook for 2 minutes. Then add crushed tomatoes, beef broth, red wine, bay leaves, and oregano. Return the short ribs to the pot.

    Simmer

    Bring the mixture to a simmer, then cover and reduce heat to low. Let it cook for about 2-3 hours, or until the short ribs are tender and easy to shred.

    Cook the Bucatini

    About 30 minutes before the sauce is done, cook bucatini according to package instructions. Drain and set aside.

    Remove short ribs from the pot. Shred the meat and return it to the sauce, discarding the bones. Adjust seasoning with salt and pepper.
