    Chop the pancetta or guanciale into small pieces. Dice the scallions, keeping the green and white parts separate.

    In a large pot of salted boiling water, cook the bucatini according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    In a large skillet, heat the olive oil over medium heat. Add the pancetta or guanciale and cook until crispy. Add the white parts of the scallions and cook for another minute.
