Prepare the Butternut Squash
Preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, and sprinkle with salt and pepper.

Roast the Squash
Place the butternut squash halves cut side down on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until the squash is tender when pierced with a fork.

Cook the Spaghetti
While the butternut squash is roasting, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Sauté the Garlic and Sage
In a large skillet, heat the remaining olive oil over medium heat. Add minced garlic and chopped fresh sage. Sauté for about 2-3 minutes until fragrant, being careful not to burn the garlic.

Mix in Spaghetti
Add the cooked spaghetti to the skillet. Toss to combine, adding reserved pasta water gradually until the desired creaminess is achieved.

Finish and Serve
Remove from heat and stir in grated Parmesan cheese. Adjust seasoning with salt and pepper. Garnish with chopped fresh parsley before serving.
