Carpaccio Ingredients
Method
Carpaccio Preparation
- 1
Prepare the Beef
Place the Westholme Wagyu beef in the freezer for about 30-45 minutes. This will firm up the meat and make it easier to slice thinly.
- 2
Slice the Beef
Once the beef is firm, remove it from the freezer and using a sharp knife, slice it as thinly as possible. Aim for translucent slices.
- 3
Arrange on Plate
Lay the beef slices on a large plate, slightly overlapping each slice to create an even layer.
- 4
- 5
Add Parmesan
Using a vegetable peeler, shave thin slices of Parmesan cheese and sprinkle them over the arugula and beef.
- 6
Dress the Carpaccio
In a small bowl, whisk together the extra virgin olive oil, lemon juice, sea salt, and fresh black pepper. Drizzle this dressing over the arranged carpaccio.
- 7
Add Capers
Sprinkle the capers evenly over the carpaccio for an added burst of flavor.
- 8
Serve Immediately
Serve the carpaccio immediately while it's fresh, garnished with extra black pepper if desired.
