    Prepare the Ingredients

    Start by preparing all the ingredients. Peel and chop the garlic, dice the onion, peel and slice the carrots, and chop the potatoes into bite-size pieces.

    Sear the Chicken

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and black pepper. Once the oil is hot, add the chicken thighs skin-side down and sear for about 5-6 minutes until golden brown. Flip and sear for another 5 minutes. Remove the chicken from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent. Then add the sliced carrots and chopped potatoes. Stir and cook for another 5 minutes.

    Add Chicken Broth and Seasoning

    Pour in the chicken broth, and add the dried thyme. Stir everything to combine, then place the seared chicken thighs back into the pot, skin-side up.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30-35 minutes until the chicken is cooked through and the vegetables are tender.

    Garnish and Serve

    Once cooked, remove the pot from heat. Sprinkle with fresh parsley before serving. Enjoy your Sunday supper!
