    Prepare the Fries

    Start by making the fries. Peel the potatoes and cut them into thin strips.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat oil in a deep fryer or a large pot to 350°F (175°C). Remove the potatoes from water, pat them dry with a towel, and fry in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels.

    Prepare the Hanger Steak

    While the fries are frying, season the hanger steak with salt and black pepper on both sides.

    Cook the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from the skillet and let it rest for 5 minutes before slicing.

    Prepare the Bordelaise Sauce

    In the same skillet, add the Bordelaise sauce and heat it until warmed through, scraping up any brown bits from the pan.

    Slice the steak against the grain and serve it on a plate with a generous portion of frites. Drizzle the Bordelaise sauce over the steak and add a dollop of Dijon mustard on the side. Garnish with fresh parsley.
