Salad Preparation

    Prepare the Salad Base

    In a large bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion. Toss gently to mix.

Goat Cheese Preparation

    Prepare the Goat Cheese

    Preheat the oven to 375°F (190°C). In a bowl, beat the egg. In another bowl, combine the grated Parmesan cheese, panko breadcrumbs, salt, and pepper. Roll the goat cheese into small balls, dip each ball in the egg, then roll in the breadcrumb mixture to coat. Place on a lined baking sheet.

    Bake the Goat Cheese

    Bake the coated goat cheese balls in the preheated oven for 15-20 minutes or until golden brown and crispy.

Lardons Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into lardons.

Sherry Vinaigrette Preparation

    Make the Vinaigrette

    In a small bowl, whisk together the sherry vinegar, olive oil, Dijon mustard, honey, salt, and pepper until emulsified.

Assembly

    Drizzle the sherry vinaigrette over the mixed salad. Top with the crispy lardons and golden goat cheese balls. Toss gently before serving.
