Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting.

Cut the Potatoes
Slice the fingerling potatoes in half lengthwise to create even pieces. This will help them cook evenly and get crispy.

Season the Potatoes
In a large bowl, combine the halved fingerling potatoes with olive oil, garlic powder, dried rosemary, salt, and black pepper. Toss well until all potatoes are evenly coated.

Arrange on Baking Sheet
Spread the seasoned potatoes in a single layer on a baking sheet, cut side down. This allows for maximum crispiness.

Roast the Potatoes
Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the potatoes are golden brown and crispy. Halfway through, stir the potatoes to ensure even roasting.

Add Parmesan Cheese
In the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the potatoes and return to the oven to melt.

Garnish and Serve
Once done, remove the potatoes from the oven and sprinkle with fresh parsley. Serve warm as a delicious side dish.
