Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Remove the leaves and stem from the cauliflower head and cut it into florets, ensuring they are roughly the same size for even cooking.

Make the Marinade
In a large mixing bowl, combine the olive oil, Thai chili paste, minced garlic, verjus, salt, and black pepper. Mix well until the ingredients are fully incorporated.

Coat the Cauliflower
Add the cauliflower florets to the bowl with the marinade. Toss them well to ensure that each floret is evenly coated with the mixture.

Roast the Cauliflower
Spread the coated cauliflower florets in a single layer on a baking sheet lined with parchment paper. Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the cauliflower is tender and has a golden-brown color, turning once halfway through the roasting time for even browning.

Serve
Once roasted, remove the cauliflower from the oven and let it cool slightly. Serve warm as a side dish or appetizer, garnished with additional verjus or fresh herbs if desired.
