Sauté the Leeks
Trim and slice the leeks thinly. In a skillet over medium heat, add a tablespoon of butter (not listed in ingredients) and sauté the leeks until they are soft and translucent, about 5-7 minutes. Season with a pinch of salt and set aside.

Make the Egg Mixture
In a mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, and chopped fresh dill until well combined.

Prepare the Puff Pastry
Roll out the puff pastry on a lightly floured surface to fit your pie dish. Transfer the rolled pastry to the dish and trim the excess. Preheat your oven to 180°C (350°F).

Assemble the Quiche
Pour the filling mixture into the prepared puff pastry shell, spreading it evenly.

Bake the Quiche
Place the quiche in the preheated oven and bake for 30-35 minutes, or until the filling is set and the top is golden brown.

Remove the quiche from the oven and let it cool for about 10 minutes before slicing. Serve warm or at room temperature.
