Preparing the Steak

Seasoning the Steak
Generously season the tomahawk ribeye steak with salt and black pepper on both sides. Let it sit at room temperature for 30 minutes.

Searing the Steak
Preheat a cast-iron skillet over high heat. Add a tablespoon of olive oil. Once hot, place the steak in the skillet and sear for 4-5 minutes on each side until a crust forms.

Transfer the skillet to a preheated oven at 375°F (190°C) and roast for 20-25 minutes for medium-rare, or until your desired doneness is reached.

Roasting the Vegetables
Spread the vegetables on a baking sheet and roast in the oven at the same temperature as the steak for 25-30 minutes or until tender and caramelized.
Making the Bordelaise Sauce

Deglazing with Wine
Pour in the red wine and bring to a boil. Reduce the heat and simmer until the wine is reduced by half.

Add the beef stock and continue to simmer until the sauce thickens, about 15 minutes.

Whisk in the remaining butter and season with salt and black pepper to taste. Keep warm until serving.

Slice the tomahawk steak and arrange it on a serving platter, surrounded by roasted vegetables. Drizzle the bordelaise sauce over the steak and serve immediately.
