Prepare the Prime Rib
Remove the prime rib from the refrigerator and let it sit at room temperature for about 1 hour before cooking. Preheat the oven to 450°F (232°C).

Season the Rib
In a small bowl, combine the kosher salt, black pepper, minced garlic, and chopped fresh rosemary. Rub this mixture all over the prime rib, ensuring an even coating. Drizzle olive oil over the roast and rub it in.

Roast the Prime Rib
Place the seasoned prime rib on a roasting pan, bone side down. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for approximately 1.5 to 2 hours, or until a meat thermometer registers 130°F (54°C) for medium-rare.

Cook the Fingerling Potatoes
While the prime rib is roasting, wash and dry the fingerling potatoes. Cut them in half lengthwise and toss with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven alongside the prime rib for the last 40 minutes, or until golden brown and tender.

Rest the Meat
Once the desired temperature is reached, remove the prime rib from the oven and let it rest for 20 minutes before slicing. This allows the juices to redistribute.
