Method

Preparing the Prime Filet

    Season the Steak

    Pat the prime filet dry with paper towels. Season generously with salt and black pepper on both sides.

    Sear the Steak

    In a hot skillet over medium-high heat, add a little oil and sear the filet for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Making Pommes Purée

    Prepare the Potatoes

    Peel the Yukon Gold potatoes and cut them into even chunks. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, and salt. Mash until smooth and creamy. Keep warm.

Cooking Hypha Mushroom Conserva

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Then add the mixed mushrooms and thyme, cooking until the mushrooms are browned and tender, approximately 8-10 minutes.

Preparing Bordelaise Sauce

    Make the Sauce

    In the same skillet used for the mushrooms, add chopped shallots and sauté until translucent. Pour in red wine and beef stock, bringing to a simmer. Reduce until thickened, about 10-15 minutes. Whisk in butter and season with salt and pepper to taste.
