    Prepare the Potatoes

    Peel the Yukon Gold potatoes and cut them into even-sized chunks, about 2 inches thick. This will ensure they cook evenly.

    Cook the Potatoes

    Place the potato chunks in a large pot and cover with cold water. Add 1 teaspoon of salt. Bring to a boil over high heat, then reduce the heat and simmer until the potatoes are fork-tender, about 15-20 minutes.

    Drain and Dry

    Once the potatoes are cooked, drain them well in a colander. Return the drained potatoes to the pot over low heat for about 1-2 minutes to help evaporate any excess moisture.

    Mash the Potatoes

    Use a potato ricer or a masher to mash the potatoes until smooth. Avoid using a food processor, as it can make the potatoes gummy.

    Incorporate Butter and Cream

    In a small saucepan, heat the heavy cream and unsalted butter until melted and warm (do not boil). Gradually mix the warm butter and cream into the mashed potatoes until fully incorporated and smooth.

    Season the Purée

    Add the remaining salt and white pepper to taste. Mix well to combine.

    Add Chives

    Finely chop the fresh chives and fold them into the potatoes. Adjust seasoning if necessary.

    Transfer the pommes purée to a serving dish and garnish with a few additional chives on top. Serve warm.
