    Prepare the Chocolate Ganache

    Chop the Parnassienne chocolate into small pieces and place it in a heatproof bowl.

    Heat the Cream

    In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.

    Combine Chocolate and Cream

    Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes. Then stir gently until the chocolate is fully melted and the mixture is smooth.

    Cool the Ganache

    Allow the chocolate ganache to cool at room temperature until it thickens slightly, about 20 minutes.

    Prepare the Berries

    While the ganache is cooling, wash the strawberries, blueberries, and raspberries thoroughly. Remove the stems from the strawberries and cut them in half.

    Prepare Serving Glasses

    Select small serving glasses or dessert cups for layering the chocolate and berries.

    Layer the Ingredients

    Start with a layer of the chocolate ganache at the bottom of each glass, followed by a layer of mixed berries. Repeat the layers until the glasses are filled, finishing with a layer of ganache on top.

    Garnish

    Dust the top layer of ganache with powdered sugar and garnish with fresh mint leaves for a pop of color and flavor.

    Chill the mini chocolate towers in the refrigerator for at least 30 minutes before serving to allow the ganache to set.
