    Prepare the Chicken

    Preheat the oven to 200°C (400°F). Rinse the half chicken under cold water and pat dry with paper towels. Rub the chicken all over with olive oil, salt, and black pepper.

    Sear the Chicken

    In a large ovenproof skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken, skin side down, and sear for 5-7 minutes until golden brown. Flip the chicken and sear the other side for another 5 minutes.

    Add Aromatics

    Once the chicken is seared, remove it from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil, minced garlic, and sliced cremini mushrooms. Sauté for 3-4 minutes until the mushrooms are golden brown.

    Deglaze the Pan

    Pour in the dry sherry and scrape the bottom of the skillet to release any browned bits. Let it simmer for about 2 minutes.

    Add Stock and Thyme

    Add the chicken stock and fresh thyme to the skillet, stirring to combine. Bring the mixture to a gentle simmer.

    Return Chicken to Skillet

    Return the seared half chicken to the skillet, skin side up. Spoon some of the mushroom and liquid over the chicken.

    Bake

    Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).

    Serve

    Remove the skillet from the oven and let the chicken rest for 5 minutes before serving. Serve the chicken with the mushroom jus spooned over the top.
