Cooking Instructions
- 1
Prepare the Fish
Season the market fish fillets with salt and black pepper on both sides.
- 2
Sear the Fish
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned fish fillets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- 3
Prepare the Artichokes and Tomatoes
In the same skillet, add another tablespoon of olive oil. Add the artichoke hearts and cherry tomatoes, sautéing for 5-7 minutes until the tomatoes start to blister and artichokes are heated through.
- 4
Make the Beurre Blanc Sauce
In a small saucepan, combine 1/2 cup of white wine and 1/4 cup of heavy cream. Reduce over medium heat until thickened, about 5 minutes. Gradually whisk in 1/2 cup of cold unsalted butter, one piece at a time, until the sauce is emulsified and creamy. Season with salt to taste.
- 5
Serve
On a plate, place a portion of the sautéed artichokes and tomatoes. Top with the seared fish and drizzle with the beurre blanc sauce.
