Duck Preparation

    Season the Duck

    Pat the duck breasts and legs dry with paper towels. Season both sides of the duck breast with salt and black pepper.

    Sear the Duck Breast

    In a large skillet, heat olive oil over medium-high heat. Once hot, place the duck breasts skin-side down in the skillet. Sear for 6-8 minutes until the skin is crispy and golden brown.

    Finish Duck Breast

    Flip the duck breasts and cook for an additional 3-4 minutes for medium-rare. Brush the tops with AZ Stronghold wine lees before removing from the skillet. Let them rest for 5 minutes.

    Confit Duck Leg

    In the same skillet, add the duck legs and cook on low heat for about 45 minutes until tender. Ensure they are submerged in their own fat or enough olive oil.

Turnip Preparation

    Prepare the Turnips

    Peel and chop the turnips into small cubes. Set aside.

    Cook the Turnips

    In a medium saucepan, melt butter over medium heat. Add the turnip cubes and sauté for about 5 minutes until slightly softened.

    Add Broth and Thyme

    Pour in chicken broth and add fresh thyme. Bring the mixture to a boil, then reduce heat and simmer for about 15-20 minutes until the turnips are fork-tender.
