Prepare the Ricotta Mixture
In a large mixing bowl, combine the ricotta cheese, chestnut flour, and the egg. Mix well until it forms a smooth dough.

Season the Mixture
Add salt and black pepper to the ricotta mixture. Stir in finely chopped fresh sage leaves to add flavor.

Form the Gnudi
With wet hands, take small portions of the ricotta mixture and form them into small dumplings, about the size of a golf ball.

Prepare the Oil for Frying
In a deep frying pan, heat the olive oil over medium heat until hot but not smoking. You can test the oil by dropping a small piece of dough into it; it should sizzle.

Fry the Gnudi
Carefully add the gnudi to the hot oil in batches, ensuring not to overcrowd the pan. Fry until they are golden brown on all sides, about 3-4 minutes.

Drain and Serve
Using a slotted spoon, remove the fried gnudi and place them on a paper towel-lined plate to drain excess oil. Sprinkle freshly grated Parmesan cheese on top and serve hot.
