Prepare the Fish
In a large bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the fish fillets and marinate for at least 15 minutes.
- 2
Cook the Asparagus
While the fish is marinating, bring a pot of salted water to a boil. Add trimmed asparagus and cook for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
- 3
Prepare Sauce Vierge
In a small bowl, mix together cherry tomatoes, chopped basil, and parsley. Drizzle with a little olive oil and season with salt and pepper to taste.
- 4
Cook the Fish
Heat a non-stick skillet over medium-high heat. Add the marinated fish fillets and cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork.
- 5
Serve
On each plate, arrange a portion of asparagus and top with the cooked fish. Spoon the Sauce Vierge over the fish and garnish with additional herbs if desired.
