Preparing the Scallops

Searing the Scallops
In a large skillet, heat the olive oil over medium-high heat. Season the day boat scallops with salt and black pepper on both sides.
Making the Semillon Verjus Sauce

Preparing the Sauce
In the same skillet, reduce the heat to medium and add the shallots. Sauté until softened, about 2 minutes.
Plating the Dish

On each plate, place the seared scallops in a circle or in the center.
