Chocolate Cake

Prepare the Oven
Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them and lining the bottoms with parchment paper.

Mix Dry Ingredients
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Incorporate Boiling Water
Carefully stir in the boiling water until the batter is smooth (the batter will be thin).

Bake the Cake
Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.
Chocolate Mousse

Melt the Chocolate
In a microwave-safe bowl, melt the semi-sweet chocolate in 30-second intervals, stirring until smooth. Let it cool slightly.

Whip the Cream
In a separate bowl, whip 1 cup of heavy cream with sugar and vanilla extract until soft peaks form.

Combine Mixtures
Fold the melted chocolate into the whipped cream, then gently fold in the beaten egg whites until no streaks remain.

Chill the Mousse
Transfer the mousse to serving cups and refrigerate for at least 2 hours before serving.
Ganache

Heat the Cream
In a saucepan, heat the heavy cream over medium heat until it just begins to simmer.

Remove from heat and add the chopped semi-sweet chocolate, stirring until melted and smooth.

Stir in the butter until fully incorporated and the ganache is glossy.

Let the ganache cool slightly before pouring over the cooled chocolate cake.
Raspberry Coulis

Prepare Raspberries
In a blender or food processor, combine the fresh raspberries, granulated sugar, and lemon juice.

Blend until smooth, then strain the mixture through a fine sieve to remove the seeds.
