Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Remove from heat and let cool slightly.

Mix Eggs and Sugar
In a separate bowl, whisk together the eggs and granulated sugar until the mixture is pale and fluffy. This should take about 5 minutes.

Incorporate Flour
Sift the all-purpose flour over the chocolate mixture and gently fold until just incorporated. Be careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake the Soufflés
Place the ramekins in the preheated oven and bake for 12-15 minutes. They should rise and have a slightly soft center.

Remove from the oven and let cool for a minute. Dust with powdered sugar and cocoa powder before serving. Enjoy your classic French soufflé!
