    Prepare the Branzino

    Preheat your oven to 400°F (200°C). Rinse the branzino under cold water and pat them dry with paper towels. Make three diagonal slits on each side of the fish.

    Season the Fish

    Drizzle olive oil over the branzino and season both inside and outside with salt and black pepper. Stuff the cavity of each fish with slices of lemon and chopped parsley.

    Prepare the Topping

    In a bowl, mix the chopped tomatoes and artichoke hearts. Season the mixture with a pinch of salt and black pepper.

    Assemble the Dish

    Place the branzino on a baking tray lined with parchment paper. Spoon the artichoke and tomato mixture generously over the top of each fish. Finally, spread a layer of olive tapenade on top.

    Bake the Fish

    Bake in the preheated oven for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.

    Serve

    Remove from the oven, garnish with additional parsley if desired, and serve immediately with lemon wedges on the side.
