    Rub the entire surface of the duck with kosher salt, making sure to cover all areas. Place the duck in a large bowl and sprinkle the black peppercorns inside the cavity, along with the fresh thyme and crushed garlic cloves.

    Cover the seasoned duck with plastic wrap and refrigerate for 24 hours to allow the salt to penetrate.

    After 24 hours, remove the duck from the fridge, rinse off the salt, and pat it dry. Set up a wire rack in your aging fridge, which should be set at a temperature between 34°F to 38°F.
