Preparation and Cooking

Prepare the Shishito Peppers
Carefully cut a slit in each shishito pepper and stuff with paneer cheese. Set aside.

Cook the Corn
Boil the Silver Queen corn in salted water for about 5-7 minutes or until tender. Drain and set aside.

Sear the Wagyu
Season the Wagyu Terres Major with salt and black pepper. Heat a skillet over medium-high heat and sear the beef on all sides until it reaches your desired doneness, about 4-5 minutes per side for medium-rare. Remove from heat and let it rest.

Prepare the Sherry-Basil Sauce
In a blender, combine sherry vinegar, fresh basil leaves, garlic cloves, olive oil, salt, and black pepper. Blend until smooth and adjust seasoning to taste.

Fry the Stuffed Peppers
In the same skillet, add a little more oil if needed and fry the stuffed shishito peppers until they are blistered and golden on all sides.

Plating
Slice the rested Wagyu and plate alongside the fried stuffed shishito peppers and boiled Silver Queen corn. Drizzle with Szechuan chili oil and sherry-basil sauce before serving.
