Prepare the Filling
In a bowl, mix together drunken goat cheese, diced Asian pears, thyme, salt, and black pepper until well combined.

Roll Out the Dough
On a floured surface, roll out the dough as thin as possible. Cut into squares or circles, about 3 inches wide.

Fill the Agnolotti
Place a small amount of filling in the center of each dough square. Fold over and seal the edges tightly to form agnolotti. Repeat until all dough and filling are used.

Cook the Agnolotti
Bring a large pot of salted water to a boil. Carefully add agnolotti and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.
