Burnt Sugar Ice Cream

Leidenheimer Banana Bread Pudding

Method

Burnt Sugar Ice Cream

  1. 1

    Prepare the Ice Cream Base

In a saucepan, combine the sugar and a splash of water. Cook over medium heat, swirling the pan occasionally, until the sugar turns a deep amber color. Remove from heat and carefully whisk in the cream and milk. Stir in the vanilla and salt. Let it cool.

  2. 2

    Chill and Churn

Once cooled, refrigerate the mixture for at least 2 hours. Then, churn in an ice cream maker according to the manufacturer's instructions.

Leidenheimer Banana Bread Pudding

  1. 3

    Prepare the Pudding

Preheat your oven to 350°F (175°C). In a large bowl, mash the ripe bananas. Add the eggs, milk, brown sugar, cinnamon, and vanilla. Whisk until well combined.

  2. 4

    Combine with Bread

Tear the Leidenheimer bread into small pieces and fold it into the banana mixture. Let it sit for 15 minutes to absorb.

  3. 5

    Bake

Pour the mixture into a greased baking dish and bake for 45-50 minutes or until set and golden brown.

Chocolate Sauce

  1. 6

    Make the Chocolate Sauce

In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add the chocolate chips. Let it sit for a minute, then stir until smooth. Stir in vanilla.
